another pintrest recipe i made

Creamy avocado pasta
Ingredients:
1 medium ripe avocado, pitted
½ lime
2 garlic cloves
¼ jalapeno
¼ cup packed basil
1 cup spinach
1 teaspoon kosher salt
2 tablespoon extra virgin olive oil
¼ cup freshly grated parmesan
1 pound whole wheat spaghetti
1 cup spinach
 basil leaves to garnish

I made this Tuesday night for dinner, i just threw everything into the blender with some olive oil-cooked some noodles and dumped this green sauce on top.My daughter did not want to eat it- i took some fresh grated parm and mixed it in. It turned out to be quite fantastic and it was a great new way to get my daughter to eat spinach! i can believe how good this was! It looked so gross even i was like uuhh this may not be great but at least dessert will be really good! lol Everyone loved it and i felt healthy eating it.

recipe from pintrest that i tweaked-

 SWEET POTATO SOUP

Ok so here is the original recipe that i got off of pintrest sounded fantastic- but wayyy to healthy for me. I like healthy as much as the next game but im no vegan and i like i little richness to my food.
vegan, serves 1-2

1 cup mashed sweet potato (from a baked sweet potato - all sticky and sweet)
1/2 cup+ No-Chicken Broth (or substitute vegetable broth) -- add more to thin out to desired consistency
1/2 cup soy milk*, original or plain or unsweetened flavors (I used Soy Dream)
*almond milk will work too

Add to taste (what I used):
* orange or satsuma zest (a pinch)
* salt (3 pinches)
* chipotle powder (1/2 tsp)

Garnish:
1/4 cup diced avocado
2-3 tortilla chips, crushed (I used red, spicy jalapeno chips!)
dash of seasoned chili salt

And here is the My version:


3 Peeled and chopped sweet potatoes 
cooked in chicken stock with

1/2 and onion and 1 tbs of garlic
 *Blend in blender/food processor ect.

add Cayenne ( to taste),chipotle sauce ( i used tabasco chipotle) 
i used a 48oz carton of chicken stock so i added the rest to the blended potatoes

1/4 cup whipping cream.
done! to serve i cut up some avocados put them on top with a squeeze of lime and some crushed up tortilla chips
